Crab Cakes

Ingredients
  Eggs 2
  Mayonnaise/Salad dressing 2 Tablespoon
  Horseradish mustard 1 Tablespoon
  Snipped parsley 1 Tablespoon
  Lemon juice 1 Tablespoon
  Fine saltine cracker crumbs 1 1⁄4 Cup (20 tbs)
  Frozen crab meat 12 Ounce
  Salad oil 3 Tablespoon
Directions

In bowl combine eggs, mayonnaise, mustard, parsley, lemon juice, 1/4 teaspoon salt, and dash pepper.
Add / cup crumbs and crab; blend well.
Using about 1/3 cup for each, shape into six 1/2-inch thick patties.
Coat with remaining crumbs; chill at least 30 minutes.
Heat oil in skillet.
Cook patties over medium heat till golden brown on both sides, 6 to 8 minutes.
Drain and serve immediately with lemon wedges, if desired.
