Hangtown Fry

Ingredients
  Oysters 18 , shucked if fresh or drained if bottled
  Ground cracker crumbs 3⁄4 Cup (12 tbs)
  Eggs 7
  Butter 4 Tablespoon
  Milk/Cream 1⁄4 Cup (4 tbs)
Directions

MAKING
1. Sprinkle oysters with salt and pepper and roll in cracker crumbs
2. Beat 1 egg well
3. Dip cracker covered oysters in egg and roll in cracker crumbs again
4. Melt butter in large frying pan and then add oysters and brown lightly, 2 to 4 minutes
5. Beat remaining eggs with milk
6. Season with salt and pepper
6. Pour eggs into frying pan, cook eggs and oysters slowly, over low heat, until eggs are set
7. When done, slide onto a serving platter and fold in half

SERVING
8. Serve with green salad
9. Serve with baked potatoes
