Seafood Skillet

Ingredients
  Diet margarine 2 Tablespoon
  Chopped onion 2 Cup (32 tbs)
  Skinless fish fillets 2 Pound, cut crosswise in 1/2-inch strips
  Salt 1 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Tomatoes 2 , sliced
  Lemon 1 , sliced
  Bay leaf 1 Large
  Cider vinegar 1 Teaspoon
  Water 1⁄2 Cup (8 tbs)
Directions

MAKING
1) In a large nonstick skillet, saute the onions in the margarine until softened.
2) Place the fish strips over the onions, sprinkle with salt and pepper.
3) Place the sliced lemon and tomatoes over the fish alongwith a bay leaf.
4) In a cup, mix the vinegar and water together and pour over the fish mixture in the skillet.
5) Cover and simmer the fish for about 10-15 minutes, until the fillets are flakey.

SERVING
6) Serve immediately in a nice plate.
