Mixed Sea Food Au Gratin
|Cooked lobster meat||1 Cup (16 tbs) (Or Canned)|
|Drained oysters/Drained fresh / quick-frozen clams||1 Cup (16 tbs), chopped (Fresh Or Quick-Frozen)|
|Minced haddock/Minced fresh flounder fillets||1 Cup (16 tbs) (Fresh)|
|Mushrooms||1 Pound (Fresh Or Canned)|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Flour||1⁄4 Cup (4 tbs)|
|Milk/Half milk and half cream / half milk and half evaporated milk||4 Cup (64 tbs)|
|Worcestershire sauce||1 Teaspoon|
|Fine dry bread crumbs||1⁄2 Cup (8 tbs)|
|Grated cheese||1⁄4 Cup (4 tbs)|
1. Start oven, set at Moderate, 350° F. Rub a 3-quart baking dish with margarine or butter.
2. Mix the lobster with the chopped oysters and fish.
3. Rinse the fresh mushrooms, slice and saute in the butter or margarine 5 minutes. If canned mushrooms are used, slice and add to the butter or margarine, blend in the flour, add the milk slowly, stirring all the time; simmer 5 minutes. Add the Worcestershire sauce, salt, the lobster mixture and the sherry.
4. Pour into the baking dish. Mix the crumbs with the cheese and sprinkle over the top of the dish. Bake 20 to 30 minutes.
