Quick Chilled Seafood Bisque
|Condensed clam chowder||1 Can (10 oz)|
|Water||3⁄4 Cup (12 tbs)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Flaked lobster/Crabmeat/ half of each, cooked, canned / frozen||1 Cup (16 tbs)|
|Light cream||2⁄3 Cup (10.67 tbs)|
1.Combine the soup, water, and onion, and simmer, covered, 5 minutes.
Force through a sieve or put in a blender and blend 30 seconds.
2.Stir in the lobster or crab and cream and mix well.
Serve with a garnish of minced chives or parsley, or a few small shrimp.
