Shrimp Balls

Ingredients
  Shrimp 2 Pound
  Water chestnuts 18
  Cornstarch 1 Tablespoon
  Sherry 2 Tablespoon
  Salt 2 Teaspoon
  Monosodium glutamate 1 Teaspoon
  Sesame oil 1⁄2 Teaspoon
  Egg white 1
  Vegetable oil 2 Cup (32 tbs)
  Lemon wedges 2
Directions

Heat 2 cups of oil in deep fat fryer to 375 degrees.
Form mixture into balls with spoon and dip in egg white.
Drop into fat.
Balls will float when done.
Fry a few more seconds until golden.
