|Turtle steak slice||4 Medium|
|Garlic||1 Clove (5 gm)|
|Cooking fat||1 Tablespoon|
|Flour||1 Cup (16 tbs) (To Roll Turtle In)|
|Sherry wine||2 Tablespoon|
|Sour cream||1 Pint|
|Paprika||To Taste (To Color)|
Roll the turtle in flour seasoned with salt and pepper.
Brown in heavy iron skillet in any good cooking fat in which a finely chopped clove of garlic has been sauteed.
Pour over the turtle the sour cream and sherry and add enough paprika to make the sauce a rosy pink.
Bake in a 300-degree oven until very tender.
Button mushrooms may be added to sauce if desired.
