Tortuga Rubia

Ingredients
  Turtle steak slice 4 Medium
  Garlic 1 Clove (5 gm)
  Cooking fat 1 Tablespoon
  Flour 1 Cup (16 tbs) (To Roll Turtle In)
  Salt To Taste
  Pepper To Taste
  Sherry wine 2 Tablespoon
  Sour cream 1 Pint
  Paprika To Taste (To Color)
Directions

Roll the turtle in flour seasoned with salt and pepper.
Brown in heavy iron skillet in any good cooking fat in which a finely chopped clove of garlic has been sauteed.
Pour over the turtle the sour cream and sherry and add enough paprika to make the sauce a rosy pink.
Bake in a 300-degree oven until very tender.
Button mushrooms may be added to sauce if desired.
