Grilled Skewered Shellfish
|Lemon garlic butter sauce/Lime butter sauce||1 1⁄2 Cup (24 tbs)|
|Squid||4 Medium, cleaned|
|Red onion||1 Large, cut into 12 pieces|
Preheat grill; grease rack.
Prepare Lemon-Garlic-Butter Sauce or Lime-Butter Sauce.
Cut body of squid in 1-inch slices.
On 12 metal skewers, thread squid pieces alternately with shrimp, scallops, tomatoes, mushrooms and onion pieces.
Place on greased rack 4 to 6 inches above hot coals or high heat; generously brush with butter sauce.
Basting with butter sauce and turning skewers once or twice, grill 5 to 10 minutes or until shrimp become firm and turn pink.
