For each serving, place 6 clams or 8 mussels on each of 4 pieces of heavy-duty foil.
Bring up foil around shellfish and add 1 tablespoon white wine and 1/8 teaspoon thyme to each packet.
Fold foil loosely around shellfish; seal edges tightly.
Grill packets over medium-hot briquets about 5 minutes or until shellfish open.
