Ingredients
  Egg white 1 , lightly beaten
  Fresh root ginger slice 1 , shredded
  Cornflour 1 Tablespoon
  Dry sherry 1 Tablespoon
  Light soy sauce 1 Tablespoon
  Salt 1 Teaspoon
  Sesame oil 1 Teaspoon
  Sugar 1 Teaspoon
  Fish stock 100 Milliliter
  Button mushroom 225 Gram, sliced
  Spring onions 3 , shredded
  Sole fillets 450 Gram
  Sunflower oil 2 Cup (32 tbs) (For Deep Frying)
Directions

Halve the fish fillets if they are large.
Place in a bowl and toss in the egg white and cornflour.
Heat the oil in a wok or deep pan and deep-fry the fish until golden and crisp; drain on absorbent kitchen paper.
Pour off all but 2 tablespoons of the oil from the wok.
Add the mushrooms, spring onions and ginger.
Stir-fry for 30 seconds, then add the salt, sugar, soy sauce, sherry and stock.
Bring to the boil, add the fish and simmer for 2 minutes.
