Hot Potato Scones
|Sifted all purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 Tablespoon|
|Cold mashed potatoes||1⁄2 Cup (8 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
Sift together the flour, baking powder, and salt.
Cut in the shortening with a pastry blender or two knives.
Add potatoes, mix well.
Add enough milk to make a soft dough.
Roll out 1/2" thick on a lightly floured board.
Cut out biscuits.
Place on lightly floured baking sheets.
Bake at 400 degrees until well risen and golden brown, about 12-15 minutes.
Remove from the baking sheets and serve while still hot.
