|Whole wheat flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Brown sugar/Raw sugar||1 Tablespoon|
|Lemon rind||1⁄2 Teaspoon, grated|
|Egg||1 , separated|
|Light cream||1 1⁄2 Cup (24 tbs)|
|Cooked apricots||1⁄2 Cup (8 tbs)|
1) In a large mixing bowl, sift the flour, baking powder, salt and sugar together, cut in the butter, lemon rind.
2) Reserve 1/2 egg white for glazing, and beat in rest of the egg with light cream.
3) Blend all the dry and the liquid ingredients then fold in cooked apricots; on a lightly floured board , roll the mixture into a circle and glaze with the egg white.
4) Bake in the oven at 450 deg F for about 12min.
5) Serve immediately.
