Flour, salt, and paprika are mixed; the scallops are dipped in the flour mixture and finally in a beaten egg bowl. The upper layer of the mixture is comprised of bread crumbs. The covered scallops are fried at 370 degrees until it turns golden brown. Fried scallops are often garnished with lemon wedges and served hot with dipping sauce.
