Scallops A La Newburg

Ingredients
  Scallops 1 Pint
  Butter 2 Tablespoon
  Flour 1 1⁄2 Teaspoon
  Cream 1⁄4 Cup (4 tbs)
  Sherry 2 Tablespoon
  Egg yolks 2
  Salt 1⁄2 Teaspoon
  Tabasco sauce 2 Drop
Directions

MAKING
1.In a pan, simmer scallops in their own liquor for 3 minutes
2.Now drain scallops and make sure to reserve the liquor
3.Cook scallops slowly in butter 5 minutes, blend in flour and add 1/2 cup combined cream and scallop liquor
4.Cook until thickened, stirring constantly
5.Add sherry, slightly beaten egg yolks, salt and tabasco sauce
6.Heat 2 minutes longer, keep stirring constantly, but do not allow sauce to boil
SERVING
7.Serve with salads
