|Cold water||1 Cup (16 tbs)|
|Cracker/Fine bread crumbs||1⁄2 Cup (8 tbs)|
|Cooking oil/Fat||3 Tablespoon|
If scallops are, large cut each into 4.
Soak scallops in.cold salted water for 3 minutes .(allowing l.tbsp.salt to 1 cup water).
Drain and dust with pepper.
Beat eggs and combine with 2 tbsp. cold water.
Dip scallops into egg water mixture, roll in cracker or bread crumbs, and fry in deep hot fat (380 F.) until deep brown.
A single layer of scallops should be fried at one time.
Serve with tartar sauce.
