This veal scallop recipe is prepared with eggs and lime juice along with bread crumbs. Simple and easily prepared, this veal scallop can be served as a side with rice as a meal along with vegetables. Flavorful and savory, this veal scallop recipe is a keeper.
Ingredients
  Scallops/Veal scallops 3 Pound (16 units, kid)
  Eggs 2 , beaten
  Vegetable oil 2 Tablespoon
  Lime juice 1 Teaspoon
  Dry bread crumbs 1 Cup (16 tbs)
  Butter 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Cut meat into pieces the size of a silver dollar, then pound between 2 sheets of waxed paper until very thin.
Mix eggs, 2 tablespoons oil, lime juice, salt, and pepper.
Dip each piece of meat into the egg mixture, then in the bread crumbs.
Heat remaining butter and oil in a skillet over medium heat.
Saute the meat until golden brown on each side.
Add more butter and oil to skillet if necessary.
Serve with Rice and Avocado
