Fried Bay Scallops

Ingredients
  Scallops 1 Pound
  Vegetable oil 2 Cup (32 tbs) (For deep frying)
  Sazon goya 1⁄2 Tablespoon (1/2 Envelope)
  Buttermilk 1 Cup (16 tbs)
  Egg 1 , well beaten
  Flour 1 Cup (16 tbs)
  Cornmeal 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Rinse the scallops and drain.
Season with salt and pepper and Sazon Goya.
Beat the buttermilk and egg together.
Combine the flour and cornmeal in a separate bowl and mix well.
Roll the scallops in the flour mixture, then in the buttermilk mixture, then in the flour mixture once again.
Arrange on a baking sheet; chill, covered, for at least 1 hour.
Deep fry in hot vegetable oil.
Watch very closely and remove from oil just as scallops begin to turn golden brown; drain on paper towels.
