|Garlic||1 Clove (5 gm), split|
|Fresh ground pepper||To Taste|
|Dry white wine||1 Cup (16 tbs)|
Heat shortening and garlic for 2 minutes.
Remove garlic the flavor will remain.
Put rack in cooker.
Add scallops and seasonings.
Pour wine over scallops.
Close cover and put pressure control in place.
When pressure is reached, remove from heat.
Cool cooker at once under running water.
Serve the scallops with tartar sauce and lemon wedges.
