Ingredients
  Scallops 1 Pound
  Scallions 2
  Oil/Melted lard 1 Tablespoon
  Salt 1 Teaspoon
  Red peppers 2
Directions

Wash and trim the scallops.
Cut each into slices.
Chop the spring onions (scallions) finely.
Heat the oil or lard and fry the scallops and onions for about 3 minutes, stirring.
Add the salt, mix well.
Wash the peppers and cut into 1 inch pieces.
Add to the pan with 4 tablespoons (1/3 cup) water and bring to the boil, stirring.
Simmer for about 2 minutes.
