Poached Scallops

Use 2 pounds fresh or frozen scallops.
Thaw frozen scallops.
In saucepan bring 1 quart water and 2 teaspoons salt to a boil.
Add scallops; return to boiling.
Reduce heat; simmer 1 minute.
Drain scallops.
Serve hot with lemon juice or chill and use in salads.

Don't Boil your scallops!

yea it is more like poached or blanched. This is a good way to cook scallops when you want to use them in salads.
