Scallops Elegant

Ingredients
  Frozen scallops 1 Pound (Fresh)
  Finely chopped celery 1⁄2 Cup (8 tbs)
  Chopped onion 1⁄2 Cup (8 tbs)
  Garlic 1 Clove (5 gm), minced
  Fine saltine cracker crumbs 1⁄4 Cup (4 tbs)
  Snipped parsley 1 Tablespoon
  Butter/Margarine 1 Tablespoon
  All purpose flour 1 Tablespoon
  Paprika 1⁄4 Teaspoon
  Salt 1⁄8 Teaspoon
  Milk 1⁄2 Cup (8 tbs)
  Dry sherry 2 Tablespoon
  Shredded process swiss cheese 1⁄4 Cup (4 tbs)
Directions

Cook scallops; cut large scallops in half.
In saucepan cook celery, onion, and garlic in 2 tablespoons butter till tender but not brown.
Stir in scallops, cracker crumbs, and parsley.
Turn into an 8-inch pie plate.
Melt the 1 tablespoon butter in same saucepan.
Blend in flour, paprika, and 1/8 teaspoon salt.
Add milk all at once.
Cook and stir till mixture is thickened and bubbly.
Remove from heat; stir in sherry.
Pour sauce over scallop mixture; sprinkle cheese atop.
Bake at 425° for 15 minutes.
