Deep-fried Scallops

Ingredients
  Scallops 1 Pound
  Salt To Taste
  Flour 1⁄4 Cup (4 tbs)
  Egg 1
  Dry bread crumbs 3⁄4 Cup (12 tbs)
  Salad oil/Fat 1 Cup (16 tbs)
  Lemon wedges/3 tablespoon tartar sauce 4
Directions

Sprinkle scallops with salt.
Roll each in flour, dip in egg and roll in bread crumbs.
Heat fat over low heat until very hot (375°F. if using thermometer), using just enough to cover an un-crowded single layer of scallops in frying basket.
Lower basket, and fry scallops until golden brown on all sides—3—4 minutes.
Drain on paper towels, and serve with lemon wedges or Tartar Sauce.
