Scallops In The Shell

Ingredients
Scallops - 8 small, or 4 large
Onion - half, finely chopped
Mushrooms - 1/4 pound, thinly sliced (110gram)
Butter - 2 ounces
Dry White Wine - 1/2 pint (275ml)
Flour - 1 1/2 ounce (40gram)
Double Cream - 1 pint (150ml)
Breadcrumbs - 2 tablespoons
Butter Extra for greasing
Salt to taste
Pepper freshly ground
Directions

MAKING
1) Slice the scallops into rounds, cutting only the white part
2) Keep aside the corals
3) Into a large pot, poach the white slices gently in wine till soft and tender which should take 10 minutes
4) Into a saucepan, melt the butter and add the onion and mushrooms and cook over a low heat for 15 minutes
5) Add the flour and add the scallop liquid slowly stirring continuously to get a smooth sauce
6) Add seasoning and cook for an additional 6minuutes
7) Take off from heat and stir in the slices and coral pieces kept aside and the cream
8) Let the dish heat through, taking care not to boil

9) Into 4 shells divide the mixture and simply fleck some breadcrumbs and butter and bake under the top grill for
