Long Island Scallop Sadte

Ingredients
  Butter/Margarine 2 Tablespoon (Unsalted)
  Bay scallops 1 Pound
  Garlic 1 Clove (5 gm), minced
  White wine/Fresh lemon juice 2 Tablespoon
  Salt 1⁄8 Teaspoon
  Ground red cayenne pepper 1 Dash
  Minced parsley 1 Tablespoon
  Lemons 2 Large, sliced (Unpeeled)
Directions

1. In a 10-inch skillet, melt the butter over moderately high heat. Add the scallops and garlic and cook, uncovered, stirring occasionally, for 4 minutes or until the scallops are opaque.
2. Add the wine, salt, and ground red pepper; simmer 1 minute longer to blend the flavors. Sprinkle with the parsley and garnish with the lemon. Serve with Green Beans Amandine and steamed brown rice.
