Scallops With Bacon And White Wine

Ingredients
  Scallops 8
  Pepper To Taste
  Flour 1 1⁄2 Ounce (For Dusting)
  Butter 2 Ounce (50 Gram)
  Shallots 2
  Streaky green bacon 2 , cut in small pieces (Use Rashers)
  Fish stock 1⁄4 Pint (150 Milliliter)
  White wine 1⁄4 Pint (150 Milliliter)
  Chopped parsley 2 Tablespoon
  Salt To Taste
Directions

GETTING READY
1. Slice the scallops thinly
2. Prepare two or three slices from each scallop
3. Season them with pepper
4. Dust lightly with flour

MAKING
5. Melt the butter in a pan
6. Add the shallots
7. Fry the shallots for a little time
8. Add the bacon and cook for an additional three minutes
9. Add the scallops and cook gently for one minute on both sides
10. Add the fish stock, white wine and the chopped parsley
11. Cook for another minute
12. Check the seasoning

SERVING
13. Serve with a slice of toasted brioche
