Scallop Seviche

Ingredients
  Bay scallops/Sea scallops 1⁄4 Pound, cut into quarters
  Diced red onion 1⁄4 Cup (4 tbs)
  Diced celery 1⁄3 Cup (5.33 tbs)
  Red bell pepper strips 1⁄3 Cup (5.33 tbs)
  Green bell pepper strips 1⁄4 Cup (4 tbs)
  Freshly squeezed lime juice 1⁄4 Cup (4 tbs)
  Tomato 1 Medium, blanched, peeled, seeded, and chopped
  Garlic 1 Clove (5 gm), minced
  Bay leaves 2 Small, broken in half
  Ground red pepper 1 Dash
  Ground black pepper 1 Dash
Directions

MAKING
1) Take a medium sized mixing bowl of stainless steel or glass and add all the ingredients to it.
2) Stir them thoroughly to combine.
3) Place in the refrigerator for 3 hours or the entire night.

SERVING
4) Serve after removing the bay leaves.
