|Bay scallops/Sea scallops||1⁄4 Pound, cut into quarters|
|Diced red onion||1⁄4 Cup (4 tbs)|
|Diced celery||1⁄3 Cup (5.33 tbs)|
|Red bell pepper strips||1⁄3 Cup (5.33 tbs)|
|Green bell pepper strips||1⁄4 Cup (4 tbs)|
|Freshly squeezed lime juice||1⁄4 Cup (4 tbs)|
|Tomato||1 Medium, blanched, peeled, seeded, and chopped|
|Garlic||1 Clove (5 gm), minced|
|Bay leaves||2 Small, broken in half|
|Ground red pepper||1 Dash|
|Ground black pepper||1 Dash|
1) Take a medium sized mixing bowl of stainless steel or glass and add all the ingredients to it.
2) Stir them thoroughly to combine.
3) Place in the refrigerator for 3 hours or the entire night.
4) Serve after removing the bay leaves.
