Herbed Scallops and Shrimp
|Parsley||1⁄4 Cup (4 tbs), chopped|
|Lime juice||1⁄4 Cup (4 tbs)|
|Mint||2 Tablespoon, chopped|
|Rosemary||2 Tablespoon, chopped|
|Olive oil||1 Tablespoon|
|Garlic||2 Clove (10 gm), minced|
|Black pepper||1⁄4 Teaspoon|
|Jumbo shrimp||1⁄2 Pound, peeled and deveined|
|Sea scallops||1⁄2 Pound, halved|
Combine parsley, lime juice, mint, rosemary, honey, oil, garlic and pepper in medium bowl; blend well.
Add shrimp and scallops.
Cover; refrigerate 1 hour.
Arrange shrimp and scallops on skewers.
Place on broiler pan.
Brush with marinade.
Broil 5 to 6 minutes or until shrimp are opaque and scallops are lightly browned.
Serve immediately with lime slices and fresh mint sprigs, if desired.
