Sauteed Scallops With Scallion

Ingredients
  Bay scallops 1 Pound (1 Pint)
  Hot water 1 Cup (16 tbs)
  Sifted dry bread crumbs 1⁄2 Cup (8 tbs)
  Egg 1 , beaten
  Cold water 2 Tablespoon
  Sliced scallion/Minced onion 1⁄3 Cup (5.33 tbs)
  Butter/Margarine 6 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
Directions

Wash scallops and simmer in the hot water for 5 min.
Drain and dry on paper toweling.
Then roll in the bread crumbs, dip in the egg which has been combined with the cold water, and roll again in crumbs.
Meanwhile, saute the scallions in the butter in a skillet for 3 min., then add scallops and saute on all sides until golden brown.
Sprinkle with salt and pepper, and serve.
