Rice Sausage

 

Rice Sausage is a popular dish that is prepared in different ways and is considered wholesome. This combination is especially popular in rice dishes that are either baked or just sautéed. Rice and sausage are used independently in a dish; however, there is a popular sausage called Boudin which has rice as one of the ingredients that goes into making this sausage. This sausage is cooked in different ways and used in many preparations. The cuisines that are known to use this sausage are South American, Southeast Asian and European. Blood sausage of UK and Korea are sausage recipes that are stuffed with rice.

 

Ingredients

Rice Sausage dish is prepared with rice (combination of glutinous & non-glutinous) and sausage (of choice) as the main ingredients. Onion, scallions, and black pepper are the other ingredients that go into making the basic rice dish with sausages. However, there are many variations to this basic dish that include other ingredients as per the recipe.

 

Method of Preparation

Preparation of Fried Rice & Sausage - The basic Rice Sausage dish is prepared by mixing sliced sausages, onions, scallions and black pepper with cooked rice and pressing them hard. This pressed down rice is cut into squares and fried till brown on both sides. Excess oil is drained.

Preparation of Rice Sausage – All the contents such as sausage meat, spices of choice and seasonings are mixed well along with cooked rice and then made into sausages. This kind of sausage is especially popular in UK, where it goes by the name Black Pudding; a popular breakfast dish.

Nutty Wild Rice Sausage Stuffing – This is a highly nutritious stuffing that can be used for stuffing turkey. It can be prepared beforehand and refrigerated.

Ingredients: Sage Sausages, butter, diced onion, chopped walnuts, diced celery, sliced fresh button mushrooms, fresh thyme leaves, wild rice, white rice, dried cranberries, ground pepper and salt.

Preparation: Walnuts are roasted golden brown and set aside. The sausages are browned and broken into smaller pieces and transferred to a bowl. Butter is melted in the same pan where sausages were browned and to this onion, mushrooms, celery, salt and pepper are added. These are sautéed till tender and thyme leaves are added when the contents have cooled down. These are added to the bowl with sausages followed by toasted walnuts, wild rice, white rice and cranberries. All ingredients are tossed well. The turkey stuffing is ready.

 

Broccoli Rice Sausage Casserole –

Ingredients: Sausages (hot or mild as preferred), chopped broccoli, cream of mushroom soup, dry rice, diced onion, milk and grated cheese.

Preparation: Sausages are browned and set aside. Broccoli and rice are cooked separately and onions are sautéed. All the ingredients are mixed well to which cream of mushroom soup is added. The contents are transferred to a casserole dish and topped with grated cheese. Adding milk is optional (only if the contents seem thick). This dish is baked and served hot.
