Onion Sausage

 

Onion Sausage is a dish that is made with sausage and onion as the two key ingredients along with other ingredients, as the recipe demands. This combination of sausage and onion is usually quite popular as filling in burgers/sandwiches, in stir-fried foods, casseroles and also rice dishes. Very popular in the American cuisine, onion and sausage are commonly used in combination with peppers in stir fried dishes. Browned sausages served in Yorkshire yellow pudding along with onion gravy is a popular dish of the English cuisine.

 

Ingredients

Onion Sausage is prepared with onions and sausages as the key ingredients. Depending on the recipe and the way the dish is prepared, the other ingredients vary. Considering this dish is simple Sausage Onion fry, the other ingredients used are butter, julienned bell peppers, green chili, ginger, tomato sweet chilly, soy sauce, salt and pepper.

 

Method of Preparation

Onion Sausage fry is prepared by slicing sausages and setting them aside. Bell peppers are julienned. Sliced onions are sautéed in butter to which green chilies, julienned bell peppers and ginger are added and sautéed. Sliced sausages are added at this stage and cooked for some time. The contents are seasoned with sweet chili sauce, salt and pepper. This dish is best enjoyed with bread.

Onion & Sausage Casserole –

Ingredients: Sweet onions, round buttery cracker crumbs, pork sausage, cream of mushroom soup, diced pimiento, shredded cheddar cheese and salt.

Preparation: Baking dish is greased and lined with onions and then sprinkled with cracker crumbs. The remaining ingredients i.e., pork sausage, diced pimiento and cream of mushroom are mixed and spooned over the onions and cracker crumbs. This dish is baked till almost done and taken out of the oven. It is sprinkled with cheese and baked for a short while, till the cheese melts.

 

 Sausage, Peppers & Onions – This variation of Onion Sausage is made with a combination of sweet and hot sausages and different colored peppers that add a wonderful flavor and color to the dish.

Ingredients: Italian Sausages (sweet & hot), sliced green, red and yellow bell peppers, slivers of garlic, sweet onion, olive oil, Marsala or red wine, crushed tomatoes (can), dried oregano, red pepper flakes, salt and pepper.

Preparation: Sausages are browned and set aside. Onions and peppers are sautéed and seasoned with salt and garlic. They are allowed to cook for some time. At this point, Marsala or red wine is added, stirred in well and the contents are allowed to cook in the wine till it reduces to half. Tomatoes, oregano and red pepper flakes are added and mixed well. Sausages are added (whole) and allowed to cook with all the ingredients. Once done, this Sausage, Peppers and Onion dish is served hot with polenta, penne pasta or hoagie roll. This dish keeps well for many days, if refrigerated.
