Mushroom Sausage

 

Mushroom Sausage is a popular dish of the Italian cuisine; however, variations of this recipe are popular in other parts of the world as well. This dish is prepared with mushrooms and sausage as two separate ingredients. There are a few sausage stuffed mushroom recipes as well that use these two ingredients. Various rice preparations, stuffed dishes, bakes, pastas, omelets, etc., are prepared with mushroom and sausage.

Though it is not a widely consumed sausage, because of its strong flavor; one of the main ingredients of Venison Sausage is Porcini mushroom. This sausage is used in various preparations that include stir fried dishes, sautés, pastas and even bakes.

Mushroom Sausage is prepared in various ways; however, the key ingredients of this dish are mushrooms (button, Portobello, etc.) and sausages (of choice). Other ingredients depend on the dish such as rice, pasta, eggs, etc.

 

Method of Preparation

Preparation of Mushroom Sausage Pasta: If the Mushroom Sausage dish is made with pasta, the pasta is cooked in salted water till al dente. It is drained of excess water and set aside. Tomato soup and milk are mixed in a bowl. Meanwhile, onions, bell peppers, garlic and Italian seasoning are sautéed till the vegetables are tender. Mushrooms and salt are added and cooked a while. Sausage is added and the contents are simmered for some more time. The cooked pasta is tossed in the mushroom and sausage sauce and served hot.

Low Calorie Sausage and Mushroom Stuffing –

Ingredients: Chicken sausage, button mushrooms, cubed baguette style white bread, chopped onion, chopped celery, chopped fresh parsley, dried sage, dried thyme, black pepper and chicken broth.

Preparation: Bread cubes are browned in the oven and set aside. Meanwhile, sausages are cooked till done, crumbling them in the process and set aside. Mushrooms, onion and celery are sautéed and cooked till tender. At this stage, cooked sausage, sage, thyme, parsley and pepper are added to the vegetables and mixed. These ingredients are tossed with the browned bread cubes. Chicken broth is added to this mixture and the contents are mixed well till they moisten. This dish is baked till the top browns and is served hot.

 

Italian Sausage & Mushroom Risotto – This is a delicious and healthy variation of the original recipe of Risotto.

Ingredients: Italian sweet sausages, Portobello mushrooms, shiitake mushrooms, fresh oregano, fresh thyme, Madeira, chicken stock, chopped onion, minced garlic cloves, butter, Arborio rice and grated Parmesan or Asiago cheese.

Preparation: Sausages are browned and chopped mushrooms; oregano and thyme are added and cooked till the mushrooms turn tender. Half of the Madeira is added and stirred in ensuring the pan is deglazed well. The contents are set aside. Meanwhile, chicken stock is heated till it simmers. Onion and garlic are sautéed in butter and rice is added to the sauté. After a while, the remaining Madeira is added and the rice is cooked till tender and creamy. Sausage mixture is added to the rice and seasoned with salt and pepper. The contents are mixed well and served, garnished with cheese.
