Lentil Sausage

Lentil Sausage is a dish that is made with lentil and sausage (chicken sausage, sweet Italian sausage, etc.). This is a delicious dish considered quite healthy and is part of the Italian cuisine. It has a few variations though. Lentil and sausage combination is ideally used in soups, stews, for stuffing and also in bakes. This recipe is now part of various other cuisines across the world.


Lentil Sausage is made with green lentils, sausages (the fat variety), bacon, chopped tomatoes, diced carrots, diced onion, minced garlic, bay leaves, chicken stock, tomato juice, red wine, chopped parsley, fronds of parsley (tied), olive oil, salt and pepper.

Method of Preparation

Lentil Sausage is prepared by first sautéing onion, carrots and garlic in olive oil. Lentils are added and cooked a while. Tomato juice, chicken stock, bay leaf, fronds of parsley, red wine and salt are added and stirred in well. The contents are simmered for almost an hour and bay leaves and parsley are removed. Meanwhile, sausages and bacon pieces are fried in a skillet in their fat till they turn golden brown. Sausages are sliced into thick chunks and added to the lentil mixture along with bacon and the fat. After mixing well, the contents are cooked for some more time and chopped tomatoes are added. Salt and pepper are added to taste and the dish is served hot garnished with chopped fresh parsley.

Lentil and Sausage Stuffed Peppers –

Ingredients: Red bell peppers, yellow bell peppers, dried brown lentils, uncooked long grain rice, diced onion, mozzarella cheese, chicken sausage (with basil & pine nut), dried raisins, chopped parsley, balsamic vinegar, capers, chopped fresh basil, parmesan cheese, salt and pepper.

Preparation: Halved bell peppers, with the stems intact (devoid of seeds and membranes) are cooked and drained of excess water. Meanwhile, lentils are cooked in salted water till al dente and drained of excess water. Rice and onion are cooked and set aside when done. Sausages are sautéed till golden brown. Cooked lentils, sausages, rice mixture, mozzarella and the seasonings, except parmesan cheese are mixed in a bowl and filled into the cooked bell pepper halves. These stuffed bell peppers are sprinkled with parmesan and baked till done. This dish is served hot.
