Eggplant Sausage

 

Eggplant Sausage refers to a combination of ingredients that are used in preparing various dishes. This is a unique yet delicious combination that is used in preparations such as casseroles, pastas, stews, stuffed dishes, rice dishes, etc. While eggplant is a rich source of various minerals such as potassium, phosphorous, copper and manganese and Vitamins (such as C, K, Thiamin, Niacin and B5); sausage is a rich source of protein. Any dish that is made with these two ingredients is considered very nutritious along with being healthy, as eggplant is known to also control weight gain.

Eggplant Sausage dishes are varied and detailed here are a few of these recipes –

 

Sausage & Eggplant Pasta –

Italian sausage is cooked in water and then browned till done. The sausage is cut diagonally into thick slices. Meanwhile, eggplant is cut into big chunks and cooked in the same skillet in which sausages were browned. Spaghetti sauce and sausages are added to the eggplant and simmered for some time with a little water. Ziti (pasta) is cooked al dente in salted water and drained off excess water. The spaghetti-sauce mixture is added to this and tossed. The pasta is served hot, topped with ricotta cheese and cracked pepper (to taste). Sprinkling parmesan cheese is optional.

 

Eggplant, Sausage & Ziti Casserole – This is a scrumptious Eggplant Sausage baked dish.

Eggplants are browned in oil, seasoned with salt and pepper and set aside. Ziti is cooked al dente in salted and water and drained off excess water. Meanwhile, sausages are browned with onions in a little oil and when done, tomato paste is added and cooked for some time. The diced Italian tomatoes, Italian seasoning, black olives, salt and crushed red pepper are added, and the contents are simmered till the flavors blend and the sauce thickens. When done, the tomato-sausage sauce is taken off the heat and flavored with basil.

White sauce is prepared with flour sautéed in butter and cooked with milk added. It is seasoned with salt, pepper and nutmeg. A greased baking dish is lined with eggplant, topped with tomato-sausage sauce, followed by white sauce. This is repeated and finally the dish is sprinkled with parmesan and mozzarella cheese. It is baked till golden brown and served hot.

 

Sausage Stuffed Eggplant –

This is another delicious Eggplant Sausage dish that is generally served as an appetizer. Halved olive oil coated eggplants are roasted, with the cut-side facing up. Meanwhile, Italian sausage is browned and mixed with garlic powder, Italian seasoning and pepper, in a bowl. Breadcrumbs are stirred in, followed by spaghetti sauce, mozzarella cheese and beaten egg. All ingredients are mixed well. The flesh from the roasted eggplants is scooped out, chopped and folded into the sausage mixture. This mixture is stuffed into the eggplant shells, sprinkled with mozzarella cheese and baked till the cheese melts and turns golden brown. This Eggplant Sausage dish is served hot with spaghetti sauce.
