Venison Sausage

Ingredients
  Lean venison 12 Pound
  Pork fat 6 Pound
  Sage 3 Tablespoon
  Cloves 4 Teaspoon
  Nutmeg 2 Teaspoon
  Salt 1⁄4 Cup (4 tbs)
  Pepper 1⁄4 Cup (4 tbs)
Directions

Trim fat from venison; grind with medium blade of grinder.
Grind pork fat; add to venison.
Add sage, cloves, nutmeg, salt and pepper; mix well.
Chill for 24 hours.
Wrap in foil; freeze.
