Christmas Brunch Casserole
|Onion||1 Large, chopped|
|Cooked rice||2 Cup (32 tbs)|
|Crisp rice cereal||3 Cup (48 tbs)|
|Shredded cheddar cheese||12 Ounce|
|Condensed cream of celery soup||21 Ounce, undiluted (2 Can)|
|Milk||1⁄2 Cup (8 tbs)|
In a skillet, cook chicken and onion over medium heat until meat is no longer pink; drain Place in a lightly greased 1 3-in x 9-in x 2-in baking dish.
Layer with the rice, cereal and cheddar cheese.
In a bowl, beat the eggs, soup and milk.
Spread over top.
Bake, uncovered, at 350° for 55-60 minutes or until a knife inserted near the center comes out clean.
Let stand for 5 minutes before cutting.
Refrigerate any leftovers.
