Overnight Brunch Casserole

|Milk||1⁄4 Cup (4 tbs)|

|Semi soft natural cheese with garlic and herbs||4 Ounce (1 Carton)|
|Bulk pork sausage||8 Ounce|
|Green onions||1⁄4 Cup (4 tbs), chopped|
|Pimento stuffed green olives||1⁄4 Cup (4 tbs), chopped|
|Whole kernel corn/Green peas||1 Cup (16 tbs), cooked, drained|
|Eggs||12 , beaten|
|Parsley||1 , garnish|
|Parsley||1 Tablespoon, chopped (To Garnish)|
1 In a 1-quart glass measuring cup, place butter or margarine.
2 Microwave at 100% (HIGH) for 45 seconds or until melted.
3 Stir in flour.
4 Microwave at 100% (HIGH) for 30 seconds.
5 Whisk in milk.
6 Microwave at 100% (HIGH) for 2-1/2 to 3 minutes or until mixture thickens and bubbles; stir every minute.
7 Mixture should be thick and smooth. Stir in cheese.
8 Microwave at 100% (HIGH) for 1 minute or until cheese melts.
9 Stir until smooth; set aside.
10 In a 12" x 7" baking dish, combine sausage and green onions.
11 Microwave at 100% (HIGH) for 5 minutes or until sausage is browned and done.
12 Stir every 2 minutes. Drain well.
13 Stir in olives, corn or peas and eggs.
14 Cover with vented plastic wrap.
15 Microwave at 70% (MEDIUM HIGH) for 8 minutes or until eggs are almost set; stir every 3 minutes.
16 Fold in cheese sauce.
17 Cover with a plastic wrap; refrigerate overnight.
18 To serve, vent the plastic wrap.
19 Microwave at 70% (MEDIUM HIGH) for 8 to 10 minutes or until heated through; stir twice.
20 Top with tomato wedges.
21 Microwave at 70% (MEDIUM HIGH) for 2 to 3 minutes or until tomatoes are warmed.
22 Sprinkle with parsley and serve.
