Easy Smothered Potatoes & Sausage Cooked in a Slow Cooker
Ingredients
  Smoked sausages 1 Pound, cut in small pieces (3 Links)
  Frozen french fried potatoes 2 Pound, Defrosted (1 Bag, Crinkle Cut Fries)
  Onion soup mix 1 Ounce, dissolved in 3/4 cup water (1 Package)
  Onion 1 , chopped
  Garlic cloves 4 , minced
  Salt To Taste
  Black pepper To Taste
  Red pepper To Taste
  Butter 1⁄4 Cup (4 tbs), chopped (1/2 Stick)
Directions

Brown sausage in skillet, drain excess grease. Add all ingredients to slow cooker, stir, cover and cook on HIGH for 3 1/2 hours, or on LOW for 6 or 7 hours.
Makes two quarts. Prep time 15-20 minutes.

Story
I got this recipe a few years ago from the owners of a local grocery/convenience store. I would go there often for their delicious plate lunches, boudin and cracklins. I told them I was writing a new cookbook for meals that could be cooked in a rice cooker, namely, "Rice Cooker Meals: Fast Home Cooking for Busy People." It just so happened that a side dish they were serving that day was cooked in her "Hitachi." (She has never called it a rice cooker, it's always "my Hitachi.") She told me how she did it, so I experimented with it in my rice cooker and it came out great the first time. So when I was writing my cookbook "Slow Cooker Meals: Easy Home Cooking for Busy People," I converted the recipe to work in the slow cooker.
