|Onion||1 Small, chopped|
|Garlic||1 Clove (5 gm), minced / pressed|
|Finely shredded swiss chard leaves||2 Cup (32 tbs)|
|Grated parmesan cheese||3 Tablespoon|
Remove casings from sausages and crumble meat into a small frying pan.
Cook, uncovered, over medium-high heat until lightly browned.
Add onion and garlic; cook, stirring, until onion is limp.
Stir chard leaves into pan (reserve stems for other uses); cook, stirring, until chard is wilted and bright green (about 1 minute).
Remove from heat.
Beat eggs until blended; pour over chard mixture and cook over low heat, stirring often, until eggs are just set.
Spoon mixture onto warm serving plates.
Accompany with tomato wedges and Parmesan cheese to sprinkle over individual servings.
