Homemade Sausage

Ingredients
  Lean pork 4 Pound, ground
  Fat pork 1 Pound, ground
  Salt 3 Tablespoon
  Black pepper 1 Tablespoon
  Powdered sage 2 Tablespoon
  Powdered allspice 1 Teaspoon
  Grated lemon peel 1 Tablespoon
Directions

1. Mix both the fat and lean ground pork thoroughly in a large bowl with the salt, pepper, sage, allspice and grated lemon peel.
2. Cover and store in the refrigerator overnight before using. The lemon peel may be omitted, if desired.
3. This makes 5 pounds of sausage.
