Beans with Spiced Pepper Sausage
|Cold water||2 1⁄2 Pint (1.3 Liters, 6 1/4 Cups)|
|Haricot beans||1 Pound, soaked in water overnight (500 Gram)|
|Onion||1 , peeled and chopped|
|Garlic||3 Clove (15 gm), 2 crushed, the other left whole|
|Chorizo||7 Ounce, cut into 1 inch pieces (200 Gram)|
|Sweet paprika||2 Tablespoon|
|Olive oil||2 Tablespoon|
|Freshly chopped parsley||1 Tablespoon|
Put water in a large saucepan.
Add beans, onion, whole garlic clove, and chorizo.
Bring to the boil, and simmer, partially covered, for 3-4 min.
Heat oil in a frying pan, and saute crushed garlic.
Remove from heat, and stir in paprika.
Add this to the beans and chorizo.
Add parsley, and cook for about 13 hr., or until tender.
Season with salt halfway through cooking.
Serve in bowls, as a first course.
