Potato and Sausage Bake
|Potatoes||3 Medium, peeled and cut in quarters|
|Bulk pork sausage||1⁄2 Pound|
|Onion||1 Medium, finely chopped|
|Cubed bread||1 Cup (16 tbs) (Use Day Old One)|
|Egg||1 , beaten|
|Milk||1⁄2 Cup (8 tbs)|
|Water||1⁄2 Cup (8 tbs)|
Peel potatoes, cut in quarters, and cook in boiling salted water until tender; drain and dice potatoes.
Meanwhile, brown crumbled sausage in a frying pan with the chopped onion until onion is golden brown.
Stir in the bread cubes.
Combine egg and milk and pour into the pan with the browned meat and onion.
Add water, salt, and pepper.
Combine with the diced potatoes and turn into a greased 1 1/2 -quart casserole.
Cover and bake in a moderate oven (350°) for 30 minutes or until the liquid is absorbed.
Remove cover during the last few minutes of baking to brown the top.
Makes 4 servings.
