Confetti Skillet Supper
|Regular rice||1⁄2 Cup (8 tbs)|
|Onion||1 Medium, chopped|
|Canned stewed tomatoes||1 Pound (1 Can)|
|Frozen baby lima beans||10 Ounce (1 Package)|
|Frozen whole kernel corn||10 Ounce (1 Package)|
1. Saute rice and onion in butter or margarine until onion is soft in skillet; stir in stewed tomatoes, lima beans, corn, salt and pepper.
2. Score tops of frankfurters; halve each crosswise; stir into rice mixture; cover tightly.
3. Simmer 30 minutes, or until liquid is absorbed and rice is tender; fluff up with fork just before serving.
