Bean And Sausage Soup
|Dried white navy beans||1 Pound|
|Chorizo sausage/Other garlic sausage||1 Pound|
|Serrano ham/Other smoked ham||1 Pound, diced|
|Potatoes||1 Pound, diced|
|Diced carrots||1⁄2 Cup (8 tbs)|
|Sliced leeks||1 Cup (16 tbs)|
|Chopped cabbage||4 Cup (64 tbs)|
|Garlic||1 Clove (5 gm), pressed|
|Bay leaf||1 , tied with peppercorns in cheesecloth|
|Beef stock||1 1⁄2 Quart|
Cover beans with water; soak overnight.
Combine beans with remaining ingredients in large pot; bring to boil.
Reduce heat; simmer 4 to 6 hours or until beans and vegetables are tender.
Remove sausage; skin and dice.
Return to soup.
Reheat soup to serve
