Breakfast Sausage With Pear Relish
|Pear relish||1⁄2 Cup (8 tbs)|
|Firm ripe pears||3 , cored and chopped|
|Freshly squeezed lime juice||3 Tablespoon|
|Drained mandarin oranges||1 Cup (16 tbs), drained|
|Red onion||1 Small, chopped|
|Celery stalks||3 , minced|
|Minced orange zest||2 Teaspoon|
|Minced mint||1 Tablespoon|
|Hot pepper flakes||1⁄8 Teaspoon|
|Prepared break fast sausages slices||6 , cut 1/2 inch thick|
Place pears in a bowl and toss with lime juice.
Add oranges, red onion, celery, orange zest, mint, and hot-pepper flakes.
Toss ingredients lightly.
Cover and refrigerate until needed.
Pear relish can be made the day before serving.
Preheat stovetop grill.
Grill sausage slices over medium-high heat until done, about 1 1/2 to 2 minutes on each side.
Sausage will be crisp, firm on the outside, and cooked through on the inside.
Turn sausage once while grilling.
Remove sausage to serving plate.
Put pear relish on side of plate and serve with Blueberry Breakfast Bread
