Smoked Sausage and Peppers is a wonderful dish with an amazing blend of colours. This dish has red, yellow and green coloured peppers with the white onion and the smoked sausages. The Smoked Sausage and Peppers has a scrumptious flavour and goes well with the bread.
  Smoked sausages 1 Cup (16 tbs)
  Oil 1 Tablespoon
  Sliced onion 1⁄2 Medium
  Bell peppers 1 Medium (Red Yellow And Green Colored)
  Garlic 1 Teaspoon, crushed
  Rotel 1 Can (10 oz)
  Salt To Taste
  Pepper To Taste
  Oregano To Taste
  Thyme To Taste

In a wok, saute the sausages for a while. Remove and keep aside.
Then in the same wok, add the onion and peppers. Stir for a while and sprinke salt and pepper. Add the garlic and return the sausages. Pour a can of Rotel and mix well. Season with the oregano and thyme. Stir and cook further for a few minutes.

 This is one of those classic Italian American street-food, lunch cart dishes. Stuff this sausage, peppers, and onions into a large bread roll or spoon it over pasta, polenta or rice and you have yourself a hearty meal.
