Sausage and Cheese Bites
|Ground turkey breakfast sausage||6 Ounce (About 1 Cup)|
|Oat bran||1 Cup (16 tbs)|
|Unbleached flour||1 1⁄3 Cup (21.33 tbs)|
|Baking powder||4 Teaspoon (1 Tablespoon Plus 1 Teaspoon)|
|Nonfat buttermilk||1 1⁄2 Cup (24 tbs)|
|Shredded cheddar cheese||1 Cup (16 tbs) (Nonfat / Reduced Fat)|
1. Place the ground sausage in a medium-sized nonstick skillet, and brown over medium-high heat, stirring constantly to crumble. Transfer the cooked sausage to paper towels to drain. Set aside.
2. Combine the oat bran, flour, and baking powder in a medium-sized bowl, and stir to mix well. Add the buttermilk, and stir just until the dry ingredients are moistened. Stir in the sausage and cheese.
3. Coat mini-muffin tins with nonstick cooking spray, and fill 3/4 full with the sausage mixture. Bake at 375°F for 15 to 18 minutes, or just until lightly browned.
