Sausage And Cheese Bites

Ingredients
  Ground turkey breakfast sausage 6 Ounce (About 1 Cup)
  Oat bran 1 Cup (16 tbs)
  Unbleached flour 1 1⁄3 Cup (21.33 tbs)
  Baking powder 4 Teaspoon (1 Tablespoon Plus 1 Teaspoon)
  Nonfat buttermilk 1 1⁄2 Cup (24 tbs)
  Shredded cheddar cheese 1 Cup (16 tbs) (Nonfat / Reduced Fat)
Directions

1. Place the ground sausage in a medium-sized nonstick skillet, and brown over medium-high heat, stirring constantly to crumble. Transfer the cooked sausage to paper towels to drain. Set aside.
2. Combine the oat bran, flour, and baking powder in a medium-sized bowl, and stir to mix well. Add the buttermilk, and stir just until the dry ingredients are moistened. Stir in the sausage and cheese.
3. Coat mini-muffin tins with nonstick cooking spray, and fill 3/4 full with the sausage mixture. Bake at 375°F for 15 to 18 minutes, or just until lightly browned.
