Apple Sausage Stuffing Bites are the best kind of stuffing you can place on your Thanksgiving table this year.
Baguette | 1/2 , cut into 1/2 inch cubes (about 4 cups) | |
Oil | 1 Teaspoon | |
Sweet apple sausage links | 2 , chopped (about 1 cup) | |
Apple | 1 Medium , chopped (gala, fuji, or golden delicious) | |
Yellow onion | 1 Small , diced (about 1 cup) | |
Celery stalks | 2 , diced (about 3/4 cup) | |
Minced fresh thyme | 1 Teaspoon | |
Salt | 1/2 Teaspoon | |
Low sodium chicken stock | 1 Cup (16 tbs) | |
Eggs | 2 Large , beaten | |
Cooking spray | 2 Dash |
GETTING READY
Preheat oven to 300F. Spray a 12 cup muffin tin with cooking spray and set aside.
On a baking sheet, place the bread cubes and toast for 8-10 minutes. Increase oven temperature to 350F.
MAKING
In a sauté pan, heat oil. Add the sausage, apples, onions and celery, and sauté for 5-7 minutes, until everything is heated through and the veggies are tender.
Turn off the heat and allow to cool a few minutes.
In a large bowl, place all the ingredients and toss well.
Using an ice cream scoop, spoon the stuffing mixture into prepared muffin tins. Bake for 45 minutes.
SERVING
Serve with some carved Turkey and gravy.
NOTES
If you’re using sausage that is not fully cooked, sauté it for 4 minutes before adding the oil and the remaining ingredients.
