Ingredients
  Beef 4 Pound (Chuck, Rump Or Round)
  Vinegar 1 Pint
  Bay leaves 4
  Peppercorns 12
  Cloves 4
  Carrots 1 Bunch (100 gm), cut into strips
  Onions 6 , sliced
  Sugar 1 Tablespoon
  Gingersnaps 12
Directions

GETTING READY
1.Start by wiping the meat with a damp cloth
MAKING
2.Place the meat and sprinkle thoroughly with salt and pepper
3.In an earthen dish, place the seasoned meat
4.Add vinegar and enough water to cover
5.Now add bay leaves, peppercorns and cloves and let stand tightly covered in a cool place for 5 days
6.Drain meat, place in a Dutch oven and brown well on all sides
7.Now add carrots, onions and 1 cup of spiced vinegar mixture
8.Cover tightly and cook over low heat about 3 hours or until meat is tender
9.When meat is cooked, add the sugar and crumbled gingersnaps and cook for 10 minutes
SERVING
10.Serve with rice
TIPS
This makes delicious gravy. If necessary, more of the spiced vinegar may be added for cooking meat or making gravy
