Sauerbraten With Herbs And Tomato

Ingredients
  Vinegar 1⁄2 Pint
  Red wine 1⁄2 Pint
  Salt 1 Teaspoon
  Onions 2 Small
  Sugar 1 1⁄2 Cup (24 tbs)
  Stalk celery 1
  Pickling spice 1 Tablespoon (Without Red Pepper)
  Carrot 1
  Beef roast 5 Pound
  Tomato paste 2 Tablespoon
  Thyme 1⁄2 Teaspoon
  Marjoram 1⁄2 Teaspoon
  Cornstarch 1 Tablespoon
  Sour cream 1⁄2 Pint
Directions

In large bowl combine vinegar, wine, salt, onions, 1 teaspoon sugar, celery, pickling spice, carrot and 1/2 pint water.
Add roast; marinate for 2 to 3 days.
Remove meat from marinade; slice in serving pieces or leave whole.
Brown at 400 degrees for 30 minutes.
Remove from oven.
Add tomato paste, thyme, marjoram and remaining sugar; add 1 pint marinade and 1 pint water.
Cover; bake at 350 degrees for 1 hour and 30 minutes.
Remove meat from sauce.
Dissolve cornstarch in 2 tablespoons water; add to sauce.
Add sour cream; return meat to sauce.
Simmer for 5 minutes; serve with buttered noodles or potato pancakes.
