Vegetable Sauce

 

Vegetable sauce is a type of sauce prepared with one or more vegetables and it is usually known by the name of the main vegetable used in the sauce preparation like tomato sauce, potato sauce, mushroom sauce, onion sauce, etc. If the sauces are prepared with mixture of various vegetables then they are simply known as mixed vegetable sauces.

 

Vegetable Sauce Recipes   

 

  • Primavera Sauce - It is a popular sauce prepared using spring vegetables. This sauce is mainly used for coating the pasta.

    Ingredients - Snap peas, scallions, olive oil, leafy vegetables (mustard, collard and kale), salt, garlic cloves, fresh parsley or basil, and black pepper are used in the preparation of sauce.

    Method of Preparation – All vegetables are cleaned and treated (trimmed, chopped, etc) as per the requirements. The greens are sautéed in olive oil, with salt and scallions, garlic and peas are added to it. Herbs like parsley or basil are added along with pepper towards the end of cooking to enrich its flavors.

    Tip – This sauce is best served warm. Pasta primavera is prepared by adding the cooked pasta into the sauce. The mixture is cooked for some more time and served after garnishing with freshly –grated Parmesan cheese. Another variation is created by substituting the pasta with rice.

 

  • Squash Sauce – A bowl of squash sauce with pasta is considered as a good autumn meal in many parts of the world, where pasta is eaten as a main dish.

    Ingredients – Butter, onion, salt, squash, fresh sage, vegetable stock, heavy cream, black pepper, parsley, short pasta, and Parmesan cheese are used in the preparation of sauce.

    Method of Preparation – The sauce preparation begins by sautéing onion in the sauce pan. Gradually other ingredients like sage, diced squash and stock are added to the sauce. When squash turns soft, it is flavored with pepper and cream and simmered until the sauce thickens.

    Pasta is cooked in a pot of salty water and tossed with sauce before serving.

  • Garlic and Tomato Sauce – This garlic rich sauce is paired with goat cheese, eggplant and pasta.

    Ingredients – Olive oil, garlic cloves, ripe tomatoes, and salt are used in the preparation of this sauce.

    Method of Preparation – The garlic is browned in olive oil and cooked with chopped tomatoes and salt until the tomatoes turn soft and almost juicy.

  • Tzatziki or Tsatsiki – This Greek sauce is also known as tzadziki and is used as an appetizer or meze and is mainly served cold. In Turkey and Greece this sauce is served as an accompaniment and in other European countries it is served with bread as a first meal course.

    Ingredients - Cucumber, salt, garlic cloves, mint, dil, yogurt, lemon juice and olive oil are required for making this sauce.

    Method of Preparation – The cucumber is peeled and seeds are scooped out of it and salted.  The salted cucumber is combined with rest of the ingredients to make a sauce.

    Serving - Cucumber sauce is served with gyros. It is also served along with other dips which are paired with various types of crackers, breads and vegetables. It is also served with heavily spicy foods.
